Tiger Tailgate and Tailgate Treats

On Saturday, husband and I went over to tailgate before the game at our friends, Walt and Emily's house. The afternoon was filled with a little football, outdoor games and good food. We had a good mix of Auburn and Clemson fans just to keep things competitive, but ultimately, our Clemson tigers pulled out the W. Unfortunately, I didn't pull out my camera until the end, but here are a few pictures from the day.

As promised, here are some pinterest-inspired tailgate dishes...

Tiger Stripe Brownies (from here)

- 8 ounces cream cheese, softened
- 5 tablespoons butter, softened
- 1/2 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 tablespoons flour
- orange food coloring

Directions

1. Preheat oven to 350°F. Prepare brownie batter as directed on package; spread into greased 13x9-inch baking pan.
 
2. Mix cream cheese, butter, and sugar until light and fluffy. Add eggs, vanilla, and flour and mix well.

3.Add food coloring until desired color. Pour over brownie batter; pull through batter with knife several times for marble effect.
 
4. Bake 30 to 35 minutes depending on how you like your brownies. Mine were actually perfect after 28 minutes. Cool in pan on wire rack.



Black Bean and Corn Salsa

- 1 can black beans (drained and rinsed)
- 1 can white or yellow corn (drained and rinsed)
- 1 can black-eyed peas (drained and rinsed)
- 4 green onions chopped (or half sweet onion... I actually used both because I love onions)
- handful of chopped fresh cilantro
- 1/3 cup apple cider vinegar
- 1/4 cup olive oil
- a couple shakes of garlic powder
- 3-4 tbsp of sugar (I actually substituted agave nectar for this and it was great)
*Some versions of this recipe call for feta cheese. Husband does not like feta cheese or anything like it... so I left it out.
